Maple Spice Candied Nuts

Maple Spice Candied Nuts are a sweet and spiced snack made by coating raw, unsalted mixed nuts with a mixture of pure maple syrup, raw cane sugar, and aromatic spices including cinnamon, nutmeg, cayenne, and cloves. Egg whites provide a foamy binding layer that helps the syrup and spices adhere evenly to the nuts. Baking at a low temperature gradually dries the coating, resulting in nuts that are slightly sticky with a crystalline sugary shell and warm spices. These nuts make a flavorful snack or gift item with a mix of sweet, spicy, and crunchy textures.

Description

This recipe for Maple Spice Candied Nuts begins by gently heating maple syrup and cane sugar until the sugar dissolves, creating a smooth sweet glaze. Separately, egg whites are whipped with salt and a blend of warm spices such as cinnamon, freshly ground nutmeg, cayenne pepper for a hint of heat, and ground cloves. The syrup mixture is then folded into the egg white mixture, and the raw mixed nuts are stirred in to coat them thoroughly.

The nuts are spread in a single layer on parchment-lined baking sheets and baked at a low temperature (300F). The nuts are stirred every 10 minutes to promote even drying and prevent burning. Baking continues until the syrup evaporates into a slightly sticky coating, which hardens as the nuts cool. The final texture is crunchy nuts with a crisp, spiced, sweet outer coating featuring the warm spice blend balanced with the natural sweetness of maple syrup.

These candied nuts can be used as treats, toppings for salads or desserts, or packaged as homemade gifts, showcasing their versatility and festive flavor profile.

Ingredients

Servings
  • 2 pounds mixed nuts unsalted, raw
  • 1 cup pure maple syrup
  • 1/2 cup raw cane sugar
  • 2 large egg white
  • 1 1/2 teaspoons salt
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg freshly ground
  • 1 pinch cayenne pepper
  • 1/4 teaspoon cloves ground

Instructions

  1. Preheat oven to 300F. Line two baking sheets with parchment paper.
  2. In a small sauce pot over medium heat, whisk together maple syrup and cane sugar until sugar is dissolved. Remove from heat and cool.
  3. In a large mixing bowl, whisk egg whites until foamy. Add salt, cinnamon, nutmeg, cayenne and cloves and whisk until well combined.
  4. Add maple syrup mixture to the egg white and whisk until combined. Add the nuts and stir the mixture until the nuts are well coated.
  5. Divide the nuts between the two baking pans and spread them into a single layer. Pour any leftover maple syrup over the top of the nuts.
  6. Bake, tossing the nuts every 10 minutes or so, until the maple syrup has evaporated and the nuts are only slightly sticky. Do not let them burn.
  7. Remove from oven and stir well. Allow to cool, and stir again, breaking up the clusters, if desired. Store in an airtight container.

Notes

  • Watch carefully during baking to avoid burning; stirring every 10 minutes helps even cooking.
  • These spiced candied nuts make excellent gifts when packaged in airtight containers.
