Marinara Sauce
Description
This marinara sauce starts by gently cooking finely diced yellow onion in extra-virgin olive oil until softened, then quickly adding minced garlic for aroma. Crushed tomatoes are stirred in along with dried oregano, salt, and black pepper. Simmering uncovered over medium-low heat slightly thickens the sauce and concentrates flavors over about 20 minutes.
Fresh chopped basil stirred in at the end brightens the sauce with fragrant herbal notes. The sauce achieves a balance of tomato acidity and savory seasoning and can be served immediately or cooled for storage. Using San Marzano tomatoes is recommended as they provide a sweeter and richer flavor with lower acidity.
The recipe notes optional seasoning adjustments and suggests adding a small amount of sugar to balance acidity if needed. Cooking longer concentrates flavors, and freezing leftovers preserves sauce quality for months.
Ingredients
- 2 tablespoons extra-virgin olive oil
- 1 cup yellow onion 120g, finely diced
- 6 garlic finely minced, cloves
- 1 (28-ounce/794g) can crushed tomatoes
- 1 teaspoon oregano dried
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- ¼ cup basil chopped, fresh
Instructions
- In a medium saucepan over medium, heat the olive oil. Add the onion, and cook, stirring occasionally, until softened, about 6 minutes. Stir in the garlic. Cook, stirring often, until fragrant, about 30 seconds.
- Add the crushed tomatoes, oregano, salt, and pepper. Reduce heat to medium-low, and simmer, uncovered, stirring occasionally, until the sauce is slightly thickened, about 20 minutes.
- Remove from heat and stir in basil. Serve immediately or cool and store in an airtight container in the refrigerator for up to 1 week or in the freezer for up to 6 months.
Notes
- Use San Marzano tomatoes when possible for a sweeter, less acidic sauce.
- Taste and adjust seasoning before serving, adding salt, pepper, or herbs as desired.
- Optionally add a pinch of sugar to balance acidity, especially with non-San Marzano tomatoes.
- Double the recipe to freeze extra portions for future use.
- Fire-roasted tomatoes can be used for a smoky flavor variation.
