Masala Chai

Masala Chai is a flavorful Indian spiced tea made with green cardamom, black tea leaves, and optional ginger, simmered with sugar and finished with warm milk. This traditional preparation balances the aromatic spices and the robustness of the black tea, producing a creamy and fragrant beverage often enjoyed alongside biscuits or cookies. The gentle simmering extracts the spices' essence while blending smoothly with the milk.

Description

The Masala Chai recipe combines cracked and ground green cardamom pods with a slice of fresh ginger, water, and sugar. These ingredients are brought to a boil to infuse the flavors before adding loose black tea leaves. After simmering the tea leaves to extract a deep, rich tea base, milk is added and heated to a gentle boil once more, which creates a creamy consistency. The chai is then strained to remove the spices and tea leaves, delivering a smooth, aromatic drink.

This chai has a balanced aroma from the cardamom and optional ginger, a moderate sweetness from the sugar, and a smooth texture given by the milk. It is traditionally served hot, complementing light snacks such as biscuits.

The recipe uses simple steps suitable for a home kitchen, and the simmering times ensure the spices and tea are properly extracted without bitterness.

Ingredients

  • 2 teacups water
  • 4 pods green cardamom
  • 2 tsp sugar
  • 1 lice ginger (optional)
  • 3 tsp black tea Red Label Orange Peko, Taj Mahal, Darjeeling, etc, loose
  • 4–6 Tbsp milk (I use whole milk)

Instructions

  1. Gather all the ingredients.
  2. With a mortar and pestle, crack 4 pods green cardamom and discard the pods. Grind the cardamom into a fine powder. If you‘re using ginger, cut 1 slice ginger (thin).
  3. Into a small saucepan, pour 2 teacups water.
  4. Add the cardamom powder, 2 tsp sugar, and the ginger slice, and bring it to a boil.  
  5. When boiling, add 3 tsp loose black tea.
  6. Simmer for 2–3 minutes.
  7. Add 4–6 Tbsp milk and bring it to boil again. 
  8. When boiling again, reduce heat and keep simmering for another 2 minutes.
  9. Remove from heat and strain the tea with a strainer. Serve with a biscuit or cookie.
