Mashed Butternut Squash

Ingredients

  • 2 small whole butternut squash
  • 1/4 cup half and half warmed
  • 2 tablespoons maple syrup
  • 2 tablespoons salted butter melted
  • ¼ cup freshly grated Parmesan cheese

For the toppings:

  • Freshly snipped thyme
  • salt and pepper to taste

Instructions

  1. Preheat the oven to 400ºF. Line a baking pan with parchment paper.
  2. Cut the butternut squash in half lengthwise. Use a spoon to scoop out seeds. Throw away any seeds and pulp.
  3. Place the squash on baking sheet cut side down. Or, you can bake them cut side up, spreading with melted butter and sprinkling with salt and pepper before baking. Bake for 45-55 minutes. Test the thickest part of the squash to make sure it is done.
  4. Use a spoon to scoop out the soft squash and place it in a large mixing bowl.
  5. Add the remaining ingredients to the mashed squash. Use a potato masher or an electric hand mixer on low speed to mix blend the ingredients together until it has a smooth, velvety texture.
  6. Garnish with fresh thyme, salt, pepper, a little butter and extra parmesan cheese, if desired.
