Bright, zesty Greek chicken wrapped up with fresh veggies and cool, creamy tzatziki sauce - these wraps make for a satisfying and nutritious meal. Instructions
- Chop the chicken into bite-sized pieces and add to a ziptop bag or glass bowl.
- Whisk together the Greek dressing, Greek seasoning, and lemon juice. Pour over the chicken.
- Cover the chicken and refrigerate for at least 30 minutes and up to 8 hours. The longer this sits, the more flavorful the chicken will be. We recommend 8 hours for the best results.
- Drain the marinade from the chicken and discard. Air fry the chicken at 390 for 10 minutes, shaking the basket gently halfway through cooking to stir the chicken. Alternately, grill the chicken in a grill basket or grill pan over medium heat. Once chicken has reached 165 degrees, remove from the heat and begin preparing the wraps.
- Spread the hummus evenly over each wrap, leaving a 2 inch border free around the edges.
- Top with the romaine lettuce and chicken.
- Slice the tomatoes in half. Cut the cucumbers in half lengthwise and then slice into half moons.
- Arrange the tomatoes, cucumbers, olives, and feta over the lettuce and chicken.
- Spoon a bit of the tzatziki sauce over the top of it all.
- Fold in the sides of the tortilla and roll up tightly, like you would a burrito. Slice in half and serve.
Notes
- Our homemade Greek dressing is perfect as the marinade. You may also use store bought, such as Ken’s Greek Vinaigrette.
- We always have tortillas on hand so that’s what we normally use for this recipe. You can also use lavash wraps or stuff this mixture into pita pockets.
- Our homemade tzatziki sauce is delicious here. You may also use store bought.
- Use low carb tortillas to make this recipe low carb!
