Mediterranean Sheet Pan Shrimp is filled with succulent shrimp and tender veggies, allowing you to experience all the vibrant flavors of the Mediterranean in every single bite.

Ingredients
- 1 ½ pounds jumbo shrimp peeled and deveined
- 1 small zucchini cut into half moons
- 1 cup cherry tomatoes
- 12 ounce jar artichoke hearts halved
- ⅓ red onion sliced
- ⅓ cup kalamata olives
- ¼ cup feta cheese crumbled
- 2 ½ tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika
- 1 teaspoon garlic salt
- ¼ teaspoon ground black pepper
Instructions
- Preheat oven to 425°F.
- Add the shrimp, zucchini, red onion, artichoke hearts, tomatoes and olives in a large mixing bowl.
- Pour the olive oil over the top, then sprinkle the garlic salt, smoked paprika, pepper and oregano over the top.
- Mix until well combined, making sure everything is well coated in the olive oil and spices.
- Pour onto a baking sheet that’s been brushed with olive oil.
- Bake for 8 minutes on the upper ⅓ rack of your oven. Then increase the temperature to 450°F and roast for another 3-5 minutes or until everything is cooked through.
- Serve with the feta cheese crumbled over the top.
