This simple recipe for mediterranean salmon comes together on one sheet pan with salmon fillets, vibrant cherry tomatoes, briny kalamata olives, and tangy feta cheese with a burst of lemon freshness. It’s not only a breeze to make, but also a feast for the taste buds and healthy too!

Ingredients
- 4 salmon fillets
- 1 pint cherry tomatoes halved
- ½ cup kalamata olives pitted
- 4-5 garlic cloves minced
- ¼ cup olive oil
- 1 lemon sliced
- ½ cup crumbled Feta cheese
- 2 cups arugula optional, for serving
Instructions
- Preheat your oven to 400 degrees F.
- In a bowl, mix together the cherry tomatoes, kalamata olives, minced garlic, and olive oil. Season with salt and pepper.
- Place the salmon fillets on a large sheet pan lined with parchment paper. Season the salmon with salt and pepper and drizzle over olive oil on top.
- Arrange the tomato and olive mixture around the salmon on the sheet pan. Place lemon slices on top of the salmon.
- Roast in the preheated oven for about 20 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Once cooked, sprinkle the crumbled feta cheese over the salmon and vegetables.
- Serve the salmon and vegetables over a bed of fresh arugula, if desired.
