Sheet Pan Shrimp and Sausage

This easy Sheet Pan Shrimp and Sausage recipe is healthy, easy, and nutrient-dense. Whip it up for an easy weeknight meal or meal prep for a quick lunch.

Ingredients
- 3/4 - 1 lb bag frozen uncooked shrimp (defrosted shrimp, peeled and deveined)
- 1 tsp kosher salt
- 1/2 tsp ground pepper
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 tbsp extra-virgin olive oil
- 1 bunch asparagus, trimmed and cut into thirds
- 4 sausages of your choice, whole
- 1 lemon, sliced
- 1/2 cup pitted black olives, halved
- 1 red onion, halved and sliced
- 1 can cannellini or navy beans, drained and rinsed
For the dressing
- 1/4 cup olive oil
- 1/2 tbsp dried oregano
- 1/2 tsp kosher salt
- 1/4 tsp ground pepper
- 1 lemon, juiced
- 1/2 tbsp red wine vinegar
- 2 small garlic cloves, pressed
For serving
- 2 tbsp fresh chopped parsley
- 2 tbsp fresh chopped mint
- 2 tbsp fresh chopped dill
- 1/2 cup crumbled Feta cheese
- optional: tzatziki for serving

Instructions
- Preheat the oven to 400F and line a large baking sheet with parchment paper.
- Make the dressing by whisking together olive oil, dried oregano, salt, pepper, lemon juice, red wine vinegar and pressed garlic. Set aside.
- Season the shrimp: In a medium bowl add the defrosted shrimp along with 1 tbsp olive oil, 1 tsp salt, ½ tsp pepper, ½ tsp garlic powder and ½ tsp onion powder and stir to combine. Set aside.
- To the sheet pan add the cut asparagus, sausages (whole), olives, drained and rinsed beans and sliced red onion. Drizzle over half of the dressing and lightly toss to coat everything well. Place the lemon slices within the ingredients on the pan.
- Bake for 20 minutes.
- After 20 minutes, remove the baking sheet from the oven and make space to place the seasoned shrimp. Add back to the oven for 8-10 minutes or until the shrimp are cooked through. The sausages should also be cooked through at this time.
- Remove the sausages from the pan and slice into ½ inch pieces. Add back to the pan.
- To finish, drizzle the rest of the dressing over top of everything on the sheet pan; garnish with fresh parsley, dill and mint; and, finally top with crumbled feta cheese. Serve with a side of tzatziki if desired.
Notes
- Use your favourite type of sausages - chicken, beef or pork!
- If you don't want to use sausages, double the amount of shrimp.
- Serve with our Greek Tzatziki Sauce if desired.
