  • 1 cup White beans , if using canned, rinse well and drain
  • ½ cup extra virgin olive oil
  • 1 clove garlic , minced
  • lemon zest of 1
  • 2 tablespoons lemon juice fresh
  • 2 tablespoons red onion thinly sliced
  • 2 tablespoons rosemary minced fresh
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper freshly ground
  • 4 lices sourdough bread

Instructions

  1. Drain the tuna well. In a medium bowl, combine the chunk white tuna with the beans, olive oil, garlic, lemon zest, lemon juice, red onion, rosemary, salt and pepper. Mix well and let sit for 10 minutes up to overnight for flavors to meld.
  2. Toast the sourdough toasts until golden brown and divide the tuna among the toasts. Add more salt and pepper to taste.
