  • 4 large egg free range
  • 1 large tomato (or 3 medium tomatoes finely chopped)
  • 1 medium onion (peeled & finely shopped)
  • 2 green sivri biber (or 1 small green bell pepper deseeded & finely chopped)
  • 1 handful parsley (freshly chopped)
  • 2 teaspoons hot chilli flakes optional, or Aleppo pepper
  • 1 teaspoon paprika sweet
  • 1 teaspoon cumin ground
  • 1 teaspoon thyme (or oregano)
  • salt to season
  • black pepper to season
  • 1 tablespoon sunflower oil (for frying)

Instructions

  1. Add a small glug of sunflower oil to a frying pan and heat gently over a medium heat.
  2. First of all, add your onions and sauté for a few minutes until they become translucent.
  3. Now add your green pepper and stir for a few minutes until it starts to soften.
  4. Now stir in your chopped tomato and add your herbs and spices and salt and pepper.
  5. Simmer over a low heat until your tomato cooks down to form a thick tomato sauce.
  6. Crack your eggs into the pan and stir them until they are scrambled into the mixture.
  7. Remove from the heat and garnish with your parsley.
  8. Serve alone or as part of a larger breakfast.

Notes

  • Seasonings can be adjusted to taste, including the optional hot chili flakes or replacing with Aleppo pepper.
  • Use large free-range eggs for best texture and flavor.
  • Turkish summer tomatoes are larger; substitute with 3-4 medium tomatoes if unavailable.
