Everyone loves a good burger - but this Mexican Burger a GREAT burger! All of your favourite Mexican flavours in a healthy burger.

Ingredients

  • 2 burger buns
  • 250 g Lean beef mince
  • 1 teaspoon cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic granules
  • 1 teaspoon Chipotle flakes
  • 10 g fresh coriander (cilantro)
  • 70 g lettuce
  • 1 tomato sliced
  • 2 tablespoon guacamole
  • 20 g mature cheddar
  • 2 tablespoon Burger relish
  • 0.5 tablespoon olive oil

Instructions

  1. In a large bowl, combine 250 g Lean beef mince, 1 teaspoon Cumin, 1 teaspoon Ground coriander, 1 teaspoon Paprika, 1 teaspoon Onion powder, 1 teaspoon Garlic granules, 1 teaspoon Chipotle flakes and 10 g Fresh coriander (cilantro).
  2. Form into 2 burger patties and put in the fridge for 30 minutes.
  3. Heat 0.5 tablespoon Olive oil in a griddle pan (or normal frying pan) over a medium heat and cook the burgers for 10 minutes, turning occasionally.
  4. Top the burgers with 20 g Mature cheddar and either cover with a cloche/lid or put the burgers under a grill (broiler) for 5 minutes, or until the cheese has melted.
  5. Cut 2 Burger buns open and build the burgers with 70 g Lettuce, 1 Tomato, burger and cheese, 2 tablespoon Guacamole and 2 tablespoon Burger relish.

Notes

  • Serve with nachos and some Mexican spiced coleslaw.
  • Put the burgers in the fridge for about 30 minutes before cooking, as this will help them to stay together.
  • We added a habanero chutney for the sauce, but you can use your favourite burger sauce instead.
  • Make a low carb version of this by using a giant lettuce leaf instead of a bread bun.
