Ingredients
The Vinaigrette
- ¼ cup fresh lime juice (2 juicy limes)
- 2 Tablespoons honey
- ¾ teaspoon Dijon mustard (or regular mustard)
- ½ teaspoon garlic powder
- ½ teaspoon kosher salt
- ¼ teaspoon ground black pepper
- ¼ teaspoon ground cumin optional
- ¼ cup extra virgin olive oil
The Salad
- 2 English cucumbers thinly sliced
- ½ large red onion thinly sliced
- ½ avocado (optional) thinly sliced
- Crumbled queso fresco optional

Instructions
Make the Honey-Lime Vinaigrette
- Blend lime juice, honey, mustard, garlic powder, salt, black pepper, and cumin together in a bowl; stream olive oil into lime juice mixture while whisking until well combined. (It makes about 1 cup)
Make the salad
- In a large bowl, add the cucumber and onion with ½ cup of the dressing. Add the chopped avocado, add crumbled queso fresco if desired. Enjoy!
