Ingredients
Tahini Dressing
- ⅓ cup Tahini
- 1 lemon juiced
- 1 clove garlic grated
- 1/2 tsp salt
- 1/8 tsp black pepper
- 3 tbsp water
Salad
- 3 Persian cucumbers chopped
- 2 roma tomatoes chopped
- 1 small red onion chopped
- ½ cup parsley chopped

Instructions
- Place the tahini, lemon juice, garlic, salt, pepper and water in a large bowl and mix using a spoon or a small whisk.
- Add the chopped cucumbers, tomatoes, red onion and parsley to the dressing and stir to combine.
- Taste and add more salt and pepper if needed.
- Serve immediately, or refrigerate for 15 minutes before serving.
Notes
- Thin out the dressing: If your tahini dressing is too thick, gradually add a small amount of water or lemon juice while whisking until you reach your desired consistency.
- Thicken the dressing: If the tahini dressing is runny, add a few squeezes of lemon juice and mix well to thicken it up.
