  • 5 egg beaten
  • ¼ cup tortilla chips crumbled
  • ½ cup jack cheese shredded
  • ¼ cup cilantro chopped
  • salt sea salt; freshly ground black pepper
  • black pepper sea salt; freshly ground black pepper

for serving

  • 4 tortillas charred
  • avocado slices
  • lime wedges
  • salsa homemade or tomatillo

Instructions

  1. Heat the oil in a medium nonstick skillet over medium heat. Add the onion, tomato, jalapeño, garlic, ¼ teaspoon sea salt, and several grinds of fresh pepper.
