Ingredients

Servings
  • 2 tomato medium ripe, cored and chopped into ¼-inch pieces
  • ¼ cup white onion finely chopped; or red onion
  • ¼ cup cilantro chopped, fresh
  • 1 jalapeno pepper stemmed, seeded, and minced
  • 1 tablespoon lime juice from 1 lime
  • 1 garlic clove, minced
  • Heaping ¼ teaspoon salt

Instructions

  1. In a medium bowl, combine the tomatoes, onion, cilantro, jalapeño, lime juice, garlic, and salt. Taste and adjust seasoning with lime juice and salt, adding some of the reserved seeds for a spicier salsa, if desired. Serve immediately or cover and refrigerate for up to 1 hour before serving. Store leftover salsa in an airtight container in the refrigerator for up to one day.

Notes

  • Pro tip: To prepare the jalapeño, use a small knife to slice straight down along one side, removing just the flesh. Turn the pepper and repeat with the remaining sides. All of the seeds and most of the veins—the extra hot stuff—should remain in the core. Mince the flesh and reserve the seeds in case you want to add more heat to the salsa. Try to minimize contact with the seeds and be sure to wash your hands well after cutting the pepper; definitely do not touch your eyes.
