Ingredients

Servings
  • 4 cups Frijoles de la Olla prepared
  • Carne Con Chile optional, prepared

For the Rice

  • 2 cups long-grain white rice
  • 4 cups chicken broth or water
  • 1 Tablespoon olive oil
  • ½ teaspoon kosher salt or sea salt

Optional Toppings:

  • queso fresco or Cotija cheese, crumbled
  • cilantro fresh, chopped
  • avocado sliced

Instructions

Cook the Rice

  1. Rinse the rice under cold water until the water runs clear to remove excess starch.
  2. In a medium pot, heat the vegetable oil over medium heat. Add the rice and toast it lightly for 2-3 minutes, stirring frequently.
  3. Add the water or chicken broth and salt. Bring to a boil, then reduce the heat to low, cover, and cook for 18-20 minutes or until the rice is tender and the liquid is absorbed. Remove from heat and let it rest, covered, for 5 minutes.

To Serve

  1. Arrange individual portion of white rice on a plate then top with frijoles de la olla. Add Carne Con Chile if desired and top with your favorite garnishes.

Notes
