  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 2 large carrots diced
  • 3 cloves garlic minced
  • 1 teaspoon cinnamon
  • 1 teaspoon cumin
  • 1 teaspoon Coriander
  • 1 teaspoon salt
  • ¼ teaspoon red pepper flakes
  • 3 cups veggie broth
  • 1 28 oz. can crushed tomatoes
  • 1 butternut squash diced
  • 1 20 oz. can chickpeas drained and rinsed
  • 1 bay leaf
  • Fresh parsley for garnish options;

Instructions

  1. In a large pot over medium heat add the oil, onion and carrot and cook, stirring frequently, until the veggies start to soften.
  2. Add the garlic, cinnamon, cumin, coriander, salt and red pepper flakes and cook, an additional 1-2 minutes.
  3. Add the veggie broth, crushed tomatoes, butternut squash, chickpeas and bay leaf and bring to a boil.
  4. Reduce heat and simmer, uncovered, for 25 minutes or until the squash is tender.
  5. Serve with naan and a sprinkle of parsley if desired.
