Moroccan Chicken Skewers with Yogurt Mint Sauce
Description
Moroccan Chicken Skewers are prepared by marinating chicken chunks in a thick paste of tomato, smoked paprika, cumin, cinnamon, garlic, salt, pepper, and olive oil for at least four hours, allowing the spices to infuse thoroughly. Skewered alternately with onion pieces, the skewers are grilled to a tender, juicy finish, turning frequently to ensure even cooking. The accompanying yogurt mint sauce combines grated cucumber, garlic, mint, yogurt, lime juice, and seasonings blended until smooth, delivering a refreshing contrast to the savory spiced chicken.
The dish is suitable for outdoor grilling meals or cookouts, pairing well as a main course with sides like rice or flatbread. The cool yogurt dip adds moisture and brightness, complementing the grilled meat and onions.
Ingredients
- 2 tablespoons tomato paste
- 1/4 teaspoon salt
- Pinch black pepper
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cumin powder
- 1/2 teaspoon garlic minced
- 1/8 teaspoon cinnamon
- 1 teaspoon olive oil
- 1/2 pound chicken breast cut into bite sized pieces, boneless, skinless
- 1 yellow onion medium, cut into chunks
for the mint yogurt dip:
- 1/2 cup Greek yogurt or coconut yogurt for paleo, non-fat, plain
- 1/4 cup cucumber grated
- 1/4 teaspoon salt
- 1/2 teaspoon garlic minced, fresh
- Pinch black pepper
- 2 tablespoons mint roughly chopped, plus additional mint for garnish (optional, fresh
Instructions
- In a large bowl combine the tomato paste, salt, pepper, smoked paprika, cumin powder, garlic, cinnamon and olive oil. Mix well.
- Add in the cut up chicken and stir to coat. The mixture is very thick, and I found it much easier to use my hands to really rub the tomato paste mixture all over the chicken. Cover and refrigerate for at least 4 hours - overnight (the longer the better!)
- Preheat your grill to medium heat and lightly spray with cooking spray.
- Using sharp skewers sticks alternate between pieces of chicken and onion, piercing each piece and sliding it to the end, building a "stack" of skewered ingredients as you go.
- Place the skewers on the grill and cook until no longer pink inside, about 12 minutes, turning every 3 minutes so you cook the chicken on each side.
- While the chicken cooks, place the grated cucumber into a kitchen towel and ring out the excess water.
- Add the cucumber, and all the other sauce ingredients, into a medium food processor and blend until smooth, well mixed, and the mint gets broken down.
- Garnish the skewers with fresh mint and serve with yogurt sauce.
