Moroccan Salad
Description
The Moroccan Salad features a base of mixed and leafy greens including kale, complemented by fresh herbs like cilantro and green onions. Red grapes and red peppers add bursts of sweetness and color, while pistachios bring a nutty crunch. Cooked wheat berries provide a chewy texture and hearty component to the salad. The dressing blends lime juice, olive oil, minced garlic, curry powder, and salt, imparting a tangy, mildly spiced flavor. The ingredients are assembled either tossed or arranged artistically before dividing and adding dressing just before serving. This salad combines fresh produce with grains and chicken for a balanced dish.
The dressing’s acidity and curry spice brighten the mixed greens and wheat berries, while the inclusion of chicken adds protein to make it more substantial. The wheat berries require about 50 minutes cooking time until tender, ensuring a pleasant chew without hardness. The salad’s diverse textures—from crisp vegetables to tender grains and crunchy nuts—make it interesting to eat and filling enough to serve as a light lunch or starter.
Portioning into two servings and dressing just before eating helps maintain crispness. Though it does not provide specific storage advice, this salad benefits from fresh assembly to avoid sogginess. The flavor and texture combination fits a variety of meal settings where a fresh, mildly spiced salad is desirable, particularly if you enjoy the interplay of textured grains and fresh vegetables.
