  • 1 pound fresh mozzarella slices 454 grams
  • 1 teaspoon extra virgin olive oil, or more as needed
  • ¼ cup chopped walnuts 30 grams
  • ¼ cup sun-dried tomatoes in olive oil, drained and chopped drain over a small bowl and reserve the oil
  • ½ teaspoon dried basil
  • ½ teaspoon dried oregano
  • salt to taste
  • 2 tablespoons freshly chopped parsley leaves

Instructions

  1. Arrange the thinly sliced mozzarella pieces on a medium-sized serving plate.
  2. Drizzle 1 teaspoon of extra virgin olive oil over the mozzarella slices.
  3. Divide the chopped walnuts and dried tomatoes evenly over the cheese.
  4. Season with dried basil, oregano, and salt to taste—A few pinches.
  5. Coat the whole dish with chopped fresh parsley and 1 generous tablespoon of the reserved olive oil from the sun-dried tomato jar, or more as preferred. You can also use extra virgin olive oil if preferred.
  6. Let it sit for about 5 to 10 minutes before serving.
