Ingredients

- 6 garlic cloves, minced
- 1 tablespoon lemon juice
- 2 teaspoons fresh thyme, roughly chopped
- 2 1/3 cups (11 ½ oz/ 325g) all-purpose flour
- 2 teaspoons salt
- 1/8 teaspoon salt
- 2 teaspoons pepper
- 1/2 cup (4oz/115g) ricotta cheese
- 1 egg
- 1/4 cup (2oz/57g) Creme Fraiche
- 1/2 cup (4oz/115g) butter
- 1 egg, beaten with water for egg wash
