Naan Bread

Naan Bread is made from a yeast-raised dough combining water, sugar, milk, egg, salt, and all-purpose flour. The dough is allowed to rise twice—to develop softness—before rolling into thin rounds. Cooking occurs briefly on a hot cast iron skillet, creating slightly puffed flatbreads with a tender texture. This bread can be served plain or with garlic-herb ghee for added richness, complementing a variety of meals.

Description

Naan Bread involves a warm water mixture with yeast and sugar to activate fermentation, followed by enriching the dough with beaten egg, milk, and salt added to the flour. Kneading develops Gluten, while the double rise improves the dough's texture and flavor. Dividing the dough into small balls and letting them rest before rolling makes the dough easier to handle and ensures airiness. Cooking each rolled piece on a preheated cast iron skillet for a few minutes on each side cooks the bread evenly and creates a subtle char and soft crumb.

This versatile flatbread pairs well with countless savory dishes, especially Indian curries or grilled meats, and can also be enjoyed simply with spreads or fillings. Adding garlic-herb ghee after cooking brings a fragrant finishing touch.

Ingredients

Servings
  • 1 cup water around 110°F, warm
  • 1/4 cup sugar
  • 1 tbsp active dry yeast
  • 1 egg beaten
  • 3 tbsp milk
  • 2 tsp salt
  • 3 1/2 cup all-purpose flour

Instructions

  1. In a bowl, whisk the water, yeast, and sugar together. Let the ingredients sit for about 10 minutes at room temperature until frothy.
  2. Nest, whisk in the milk, egg, and salt. In small portions, carefully add the flour as you mix. Knead the flour for 6-8 minutes by hand on a lightly floured surface or in a stand mixer.
  3. Place dough in a bowl and cover it with a plastic wrap. Let the dough rise for about an hour, or until it has doubled in volume.
  4. Split the dough into 10-15 equal sized pieces. Roll each piece into a ball and place it on well-floured work surface. Cover the dough balls with a towel and allow them to rise for 15-20 minutes.
  5.  On a lightly floured surface, roll out each dough ball until it's thin.
  6. On a preheated cast iron skillet, cook each naan for about 3 minutes on each side.
  7. Serve with garlic-herb ghee or plain.
