Nigerian Beef Suya - West African Flavours

  • 100 g (3.5oz) roasted peanuts
  • 1 tsp ground ginger
  • 1 tsp ground black pepper
  • 1 tsp white pepper
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp cayenne pepper
  • salt
  • 1/8 tsp ground nutmeg
  • 250 g (8.8oz) beef sirloin steak or venison steak, finely sliced
  • 2 tbsp groundnut oil

To serve:

  • Thinly sliced red onion
  • shredded cabbage
  • chopped tomatoes
  • fried plantains

Instructions

  1. Add the peanuts, ginger, black pepper, white pepper, garlic powder, cayenne pepper, salt, and nutmeg to a blender and blend for a minute or so until it forms a coarse powder. Careful not to blend too much to avoid the peanuts turning into peanut butter. Transfer the suya powder onto a flat surface and spread it out.
  2. Brush the beef slices with the oil, and dab both sides of the meat sliced in the suya powder so that they are well coated.
  3. Pre heat the grill (or barbeque), and grill the meat for up to 15 mins (or until done), making sure to turn the meat half way through cooking.
  4. Serve the meat warm, topped with the onion, cabbage, tomatoes and plantains.
