These easy Keto No Bake Cookies are chewy, chocolatey, and packed with a delicious blend of coconut, nuts, and seeds.

Ingredients
- 2 cups unsweetened shredded coconut
- 1 cup chopped toasted pecans
- 1 cup almond butter
- ½ cup sunflower and/or pumpkin seeds
- ½ cup monk fruit/allulose
- ½ cup unsalted butter
- ¼ cup unsweetened cocoa powder
Instructions
- Add the butter and almond butter into a microwave safe bowl and melt in the microwave for about 15 seconds.
- Add in the sweetener and cocoa powder. Whisk until well combined.
- Add in the shredded coconut, chopped pecans and seeds. You can use all sunflower or pumpkin, or what I did was use half and half.
- Mix with a silicone spatula until everything is combined. The mixture will seem too loose to stay together, but once it sets up, it stays together perfectly!
- Using a cookie scoop (1 ½ tablespoons) scoop onto a parchment paper lined sheet pan in small mounds.
- Gently press down to flatten them a bit, resembling a cookie shape.
- Chill them in the fridge for at least 2 hours or until they have firmed up. Store in the fridge for 5-7 days or freezer.
Notes
- Makes about 30 cookies, serving size 2.
