No-Bake Keto Cookies

These easy Keto No Bake Cookies are chewy, chocolatey, and packed with a delicious blend of coconut, nuts, and seeds.

Ingredients

  • 2 cups unsweetened shredded coconut
  • 1 cup chopped toasted pecans
  • 1 cup almond butter
  • ½ cup sunflower and/or pumpkin seeds
  • ½ cup monk fruit/allulose
  • ½ cup unsalted butter
  • ¼ cup unsweetened cocoa powder

Instructions

  1. Add the butter and almond butter into a microwave safe bowl and melt in the microwave for about 15 seconds.
  2. Add in the sweetener and cocoa powder. Whisk until well combined.
  3. Add in the shredded coconut, chopped pecans and seeds. You can use all sunflower or pumpkin, or what I did was use half and half.
  4. Mix with a silicone spatula until everything is combined. The mixture will seem too loose to stay together, but once it sets up, it stays together perfectly!
  5. Using a cookie scoop (1 ½ tablespoons) scoop onto a parchment paper lined sheet pan in small mounds.
  6. Gently press down to flatten them a bit, resembling a cookie shape.
  7. Chill them in the fridge for at least 2 hours or until they have firmed up. Store in the fridge for 5-7 days or freezer.

Notes

  • Makes about 30 cookies, serving size 2.
