No-Bean Chili

Ingredients

  • 2 tablespoons olive oil
  • 1 Large, Yellow Onion diced
  • 2 cloves garlic minced
  • pounds ground beef 85/15
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ¼ teaspoon cayenne pepper optional
  • 1 can crushed tomatoes (28 ounces)
  • 1 can tomato sauce (14 ounces)
  • 1 cup beef broth
  • salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onions and cook until translucent, about 5 minutes. Add minced garlic and cook for an additional minute.
  2. Increase heat to medium-high and add ground beef to the pot. Cook until browned, breaking it up with a spoon as it cooks. Drain excess fat if necessary.
  3. Stir in chili powder, cumin, smoked paprika, oregano, and cayenne pepper. Cook for 2 minutes to allow the spices to become fragrant.
  4. Pour in crushed tomatoes, tomato sauce, and beef broth. Season with salt and pepper. Bring to a simmer, then reduce heat to low and cook for 20-25 minutes, stirring occasionally.
  5. Taste and adjust seasoning as needed. Serve hot with your choice of toppings such as shredded cheese, diced onions, or sour cream.
