Slow Cooker Vegetarian Chili is simple to make and is the perfect fall dinner.

Ingredients
- 1 Tablespoon canola oil
- 1 medium onion chopped
- 1 medium red bell pepper chopped
- 1 medium Jalapeno pepper seeds removed and chopped
- 2 cloves garlic minced
- 1 can (28 oz) diced tomatoes
- 1 can (15 oz) black beans rinsed and drained
- 1 can (15 oz) chickpeas rinsed and drained
- 1 cup frozen corn
- ¼ cup tomato paste
- 1 teaspoon sugar
- 1 teaspoon basil chopped fresh or dried
- 1 tablespoon Mexene Chili Powder Mix or chili powder more or less to taste

Instructions
- Get out and measure your ingredients.
- Heat oil in a large skillet over medium high heat. Add the onion, bell pepper, garlic and jalapeno peppers.
- Cook until translucent and soft. Add garlic and stir until fragrant, 30 seconds.
- Transfer to your slow cooker along with the remaining ingredients.
- Stir until combined. Cook on low for 4-5 hours.
- Serve with favorite toppings – sour cream, grated cheese, avocado, chips etc.
- Enjoy every bite!
