Ingredients
- 2 teaspoons dashi granules
- 4 cups water
- 8.8 ounces Miwa somen noodles
- 1 cup sliced shitake mushrooms
- 3 tablespoons red miso paste
- 1 cup baby spinach
- 1/4 cup sliced green onion

Instructions
- Stir together dashi granules and water in a saucepan over high heat. Bring to a boil.
- Once boiling add in noodles and mushrooms. Boil 2 minutes.
- Remove from heat and stir in miso paste until completely dissolved.
- Stir in spinach and green onions and allow spinach to wilt. Serve hot.
