"Oatmeal Cookie" Baked Oatmeal

"Oatmeal Cookie" Baked Oatmeal blends applesauce, rolled oats, cinnamon, nutmeg, brown sugar, and raisins into a baked dish that mimics the flavors of oatmeal cookies. The texture is moist and tender, making it suitable for breakfast or a snack.

Description

This baked oatmeal recipe combines unsweetened applesauce with an egg, brown sugar, vanilla extract, and warming spices including cinnamon and nutmeg. Salt and baking powder are added to balance and leaven the mixture. Melted butter and milk provide richness and moisture to the blend of rolled oats and raisins.

After mixing, the batter is poured into a lightly greased casserole dish and baked uncovered at 375ºF for 45 minutes. The result is a slightly golden, set oatmeal with pockets of sweetness from the raisins and the familiar spice notes that evoke classic oatmeal cookies.

The baked oatmeal can be portioned into six servings and served warm or cold. It also pairs well with cold milk poured over, enhancing the comfort food quality. This dish offers a make-ahead option for a wholesome, nutritious start or anytime treat without the dryness that traditional cookies may have.

Servings
  • 1.5 cups applesauce $1.00, unsweetened
  • 1 egg $0.27, large
  • 1/2 cup brown sugar $0.16
  • 1/2 Tbsp vanilla extract $0.42
  • 1/2 Tbsp cinnamon $0.15
  • 1/4 tsp nutmeg $0.02

  • 1/2 cup raisins $0.75
  • 3 cups rolled oats $0.51, old-fashioned

Instructions

  1. Preheat the oven to 375ºF. In a large bowl, whisk together the apple sauce, egg, brown sugar, vanilla, cinnamon, nutmeg, salt, baking powder, and melted butter. Once whisked smooth, add the milk and whisk until smooth again.
