Vegetarian oatmeal patties with cheese, carrots and lots of spices, these curried patties are perfect served with a yogurt dip or in a burger bun.

Ingredients
- 3 tablespoons olive oil divided
- 1 medium onion
- 1⅔ cups carrots grated, 150 g
- 2½ cups thick rolled oats 250 g
- 2 cups vegetable broth 500 ml, Note 1
- 2 eggs
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- ½ teaspoon Turmeric
- 1 teaspoon garlic powder
- 1 tablespoon all-purpose flour
- 3 tablespoons chopped parsley fresh or frozen
- 1 tablespoon chopped chives fresh or frozen
- 1 cup grated cheese grated, 100 g, Note 2,
- Fine sea salt and ground black pepper
Instructions
- Cook onions: Heat 1 tablespoon of the oil in a large nonstick pan or skillet. In the meantime, finely chop the onion. Cook until translucent, about 2-3 minutes, on medium-low heat, stirring often.
- Add the grated carrots and cook, stirring often, for about 5 minutes. Add the rolled oats. Roast slightly, stirring often, for about 3 minutes.
- Add the hot vegetable broth, bring to a boil, and simmer for 5 minutes. Let cool for about 15-20 minutes.
- Patty mixture: In the meantime, grate the cheese and chop the herbs. Add them to the oatmeal mixture together with the lightly beaten eggs, cumin, coriander, turmeric, garlic powder, parsley, chives, and flour. Mix well.
- Form the patties by taking portions out of the mixture and pressing them into patties. You will have about 12-14 vegetarian patties.
- Cook patties: Wipe the pan or skillet you used before with some kitchen paper. Heat 1 tablespoon of the remaining oil. Fry half of the vegetarian patties on medium heat, for about 7-8 minutes, turning 3-4 times in between.
- Heat: If the patties start getting too brown too soon, reduce the heat slightly. Remove them from the pan.
- Second batch: Add the remaining oil and cook the second batch of patties.
- Serve hot or at room temperature as suggested above.

- Cheese: If the oatmeal patties should be vegetarian, make sure you use vegetarian cheese made without animal rennet.
