Olive Garden Salad

Ingredients

Servings
  • 2 romaine lettuce chopped, small heads
  • ½ small red onion sliced
  • 2 Roma tomato sliced
  • 3 ounces (about ½ cup) medium black olives drained
  • 4 whole peperoncini peppers
  • cup Parmesan Cheese grated
  • 1-2 cups croutons Texas Toast seasoned

For the Dressing

  • cup extra-virgin olive oil high-quality
  • 1 (7-ounce) package Italian dressing mix Good Seasons
  • cup white wine vinegar
  • ¼ cup water
  • 1 tablespoon light corn syrup
  • 2 tablespoons mayonnaise
  • ¾ teaspoon Dijon mustard
  • ½ teaspoon garlic powder
  • ¼ cup Parmesan Cheese grated

Instructions

For the Dressing

  1. Place all ingredients in a blender and mix until well combined.
  2. Pour into jar, cover, and refrigerate for at least 30 minutes.

For the Salad

  1. Arrange salad ingredients in a large bowl.
  2. Fold in dressing until well coated or serve on the side.

Notes

  • Don't stop at 1/ cup Parmesan cheese - keep it going til someone says when! 
  • Serve with soup and breadsticks for a classic Olive Garden lunch.
  • Make the dressing up to a few days ahead for a quicker lunch.
