Description
This Zuppa Toscana recipe replicates the restaurant classic by starting with thinly sliced kielbasa browned until crisped. The sausage is combined in a slow cooker with chicken broth, chopped onion or flakes, minced garlic, bacon bits if desired, and chunky red potatoes. The mixture cooks on low for several hours allowing the potatoes to become tender and flavors to blend.
Just before serving, sliced kale and heavy cream are stirred in and cooked briefly until the kale softens but retains some texture. The soup finishes rich and creamy with savory meat and hearty potatoes balanced by tender greens. The bacon bits add optional smoky depth.

Ingredients
- 1 oz kielbasa sausage package
- 64 oz chicken broth
- 1/4 onion or substitute 1 tbsp dry onion flakes, finely diced
- 4 red potato cut into 1-1/2 inch chunks
- 1/2 tsp garlic minced
- 3 tbsp bacon bits (optional)
- 2-3 kale leaves washed and thinly sliced
- 1 cup heavy cream
Instructions
- Thinly slice your sausage.
- In a large skillet over medium high heat, add a little bit oil or cooking spray. Place sausage in pan and cook, stirring and flipping meat often till you get some crispy browning on both sides. Remove from heat.
- In a slow cooker or crockpot add cooked sausage. Then add in chicken broth, onion, garlic, bacon bits and sliced potatoes and gently stir to combine.
- Slow cook on low for 4-5 hours.
- Remove lid, add in sliced kale and heavy cream. Stir to combine. Let cook additional 15 minutes until kale is cooked.
- Serve and enjoy!
