One Pot Caprese Chicken Pasta
Description
This recipe begins by sautéing boneless, skinless chicken breast pieces in olive oil with Italian seasoning, salt, and pepper until nearly cooked. Cherry tomatoes are added to soften and release juices, then removed alongside the chicken. Onion and garlic are sautéed in the same pan before chicken broth is poured in, scraping up browned bits for added flavor. Uncooked pasta is stirred in and simmered until tender and most broth is absorbed.
Finally, the chicken, tomatoes, fresh basil, and mini mozzarella balls are returned to the skillet and gently mixed. The mozzarella softens with the residual heat, blending creamy richness into the dish without becoming fully melted. The combination balances tender pasta, juicy tomato bursts, seasoned chicken, and herbaceous basil with mild, melting mozzarella.
If the broth liquid is absorbed before the pasta is cooked, adding an extra quarter cup of broth helps achieve the right tenderness. Finished pasta can be drizzled with balsamic glaze for additional tang and sweetness, enhancing the Caprese inspiration. This one-pot method reduces cleanup while delivering a fresh, flavorful result.
Ingredients
- 1 tablespoon olive oil
- 1 pound chicken breast cut into bite sized pieces, boneless, skinless
- 1 teaspoon Italian seasoning
- salt freshly ground, to taste
- black pepper freshly ground, to taste
- 1/2 cup yellow onion
- 2 cloves garlic grated or minced
- 2 3/4 cups chicken broth + 1/4 cup extra if needed, low sodium
- 10 ounces pasta I used cavatappi, uncooked
- 1 1/2 cups cherry tomato
- 2 tablespoons basil chopped, fresh
- 1/2 cup mozzarella mini, fresh, balls
- balsamic glaze optional
Instructions
- Heat the olive oil in a deep 12 inch skillet over medium-high heat. When the oil is hot add in the pieces of chicken and spread them into a single layer. Season with the Italian seasoning, salt and pepper.
- Let the chicken cook for 2-3 minutes before flipping it. Continue to cook the chicken until it's nearly cooked through. Add in the cherry tomatoes and cook for another minute or until the tomatoes have softened and the skin start to wrinkle. Pour the chicken and tomatoes onto a plate.
- Add the onion and garlic into the skillet and season with a little salt and pepper. Sauté for a minute. Pour in the chicken broth and scrape all the bits off the bottom of the pan. Bring the broth to a boil, then pour in the pasta and stir.
- Lower the heat to medium or medium-low, so it's simmering. Stir occasionally, cooking the pasta until it's tender and most of the liquid is absorbed.
- Add the chicken, tomatoes and basil back in with the pasta and stir everything together. Taste for seasoning. Top with the mozzarella balls and cover with a lid or piece of foil. Cook for another minute or until the cheese is melted.
- Drizzle with balsamic glaze and garnish with extra basil before serving.
Notes
- If the broth is absorbed before the pasta is fully cooked, add an additional 1/4 to 1/2 cup broth to finish cooking.
- Use fresh mozzarella mini balls for best texture; larger pieces may need to be chopped.
- Drizzling balsamic glaze over the finished dish enhances the Caprese flavors but is optional.
