Crock Pot Chicken Fajita Tortilla Lasagna

Crock pot chicken fajitas are layered with tortillas and salsa in this delicious and simple slow cooker Mexican dinner recipe!

Ingredients

  • 1 tbsp olive oil
  • ½ cup red bell pepper diced
  • ½ cup green bell pepper diced
  • 1 cup onion diced
  • 2 cloves garlic minced
  • 1 lb chicken thinly sliced
  • ¼ cup lime juice freshly squeezed
  • ½ tbsp sea salt
  • ½ tbsp ground cumin
  • 1 tbsp ground chipotle pepper or chili powder
  • ¼ cup cilantro chopped
  • 4 cups salsa
  • 6 tortillas soft taco size

Instructions

  1. Add the olive oil to a large skillet over medium heat.
  2. Add the bell peppers & onion.
  3. Saute 5-7 minutes.
  4. Add the garlic and sauté an additional 1-2 minutes.
  5. Add the chicken and cook through.
  6. While the chicken is cooking.
  7. Combine the lime juice, salt, cumin, chipotle pepper & cilantro in a small bowl.
  8. Once the chicken is cooked through, pour the sauce over the chicken & veggies.
  9. Reduce the heat to low and simmer 5-10 minutes.
  10. Remove from the heat and set aside.
  11. Pour 1 cup of salsa in the bottom of the crock pot.
  12. Tear the tortillas into strips and layer 2 tortillas on top of the salsa.
  13. Pour half of the chicken fajita mixture on top of the tortillas.
  14. Top with 1 cup of salsa.
  15. Layer 2 more tortillas on top of the salsa, then top with the remaining chicken fajita mixture.
  16. Top with another cup of salsa.
  17. Top with the remaining 2 tortillas, then cover with the remaining salsa.
  18. Cook on low for 3-6 hours.

Notes

  • Vegetarian Option: Replace the chicken with 1 lb of additional veggies, such as additional bell peppers or zucchini.
  • Gluten Free Option: Use corn tortillas instead of flour tortillas.
