Ingredients

  • 1 tablespoon olive oil
  • 1/2 /2 lb ground Italian sausage
  • 1/2 /2 white onion diced
  • 4 cloves garlic minced
  • 1 14.5 ounce can diced tomatoes, undrained
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 1 teaspoon kosher salt
  • 1 20 ounce package refrigerated cheese tortellini, uncooked
  • 3 cups spinach leaves
  • 1/4 /4 cup chopped basil
  • 1/4 /4 cup Parmesan Cheese

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the sausage and onion and cook until sausage is no longer pink. Add the garlic and cook for an additional minute.
  2. Add the full can of tomatoes, cream, chicken broth, salt, and tortellini. Stir to coat and simmer over medium heat covered until tortellini is cooked through about 5-7 minutes. Add the spinach leaves and cook until wilted and sauce has reduced.
  3. Stir in the basil and Parmesan. Serve.

Notes

  • Don't have chicken broth? Use cream instead or even water (shhh don't tell).
