One Pot Jambalaya Pasta

One Pot Jambalaya Pasta combines diced chicken, smoked sausage, and optional shrimp with linguine or spaghetti in a flavorful, spicy broth featuring tomato sauce, chicken broth, and Cajun seasonings. The ingredients simmer together in a single pot until the pasta softens and the proteins are cooked through, absorbing the rich and mildly spicy flavors. This method yields a hearty, comforting dish with a balanced mix of tender meat, slightly firm pasta, and well-seasoned sauce, ideal for a satisfying dinner with easy cleanup.

Description

The One Pot Jambalaya Pasta recipe brings together diced chicken, red bell pepper, onions, and smoked sausage with a blend of Cajun spices, tomato sauce, chicken broth, and diced tomatoes with green chiles. These components simmer along with linguine or spaghetti noodles, allowing pasta to absorb the spicy, savory broth and mingle with the meats and vegetables. When shrimp are used, they are added midway through cooking to prevent overcooking and to retain tenderness. The result is a moist, well-seasoned pasta dish with a combination of textures from the sausage and chicken underpinned by a robust, tomato-based sauce.

The cooking process involves sautéing the chicken initially, then adding the remaining ingredients (except shrimp) and simmering for about 20-25 minutes until the pasta softens in the flavorful liquid. The optional shrimp is added about 10 minutes into the simmer to finish cooking alongside the pasta. Garnishing with cilantro adds a fresh note to the finished dish.

This meal works well served as a standalone dinner, offering a balance of protein, vegetables, and carbohydrates in one pot. Ideal for those who want a filling yet flavorful meal without multiple pans or steps.

For best flavor, sautéing the smoked sausage in butter before combining with other ingredients enhances its richness. Adding the shrimp later in the cooking process helps maintain their texture and color. Additional chicken broth can be added during simmering to prevent the pasta from drying out or sticking depending on the stovetop and pot used.

Ingredients

Servings
  • 2 tablespoon neutral cooking oil generic cooking oil
  • 1 1/2 pounds chicken diced
  • 1 red bell pepper diced
  • 1 white onion (or yellow) diced
  • 1 pound smoked sausage sliced
  • 4 1/2 cups chicken broth
  • 1 1/2 cups tomato sauce
  • 10 ounces diced tomatoes with green chiles RO*TEL brand
  • 1 tablespoon Cajun seasoning Tony Chachere's is the best!
  • 1 tablespoon garlic powder
  • 1 tablespoon paprika
  • 1 tablespoon onion powder
  • salt to taste
  • black pepper to taste
  • 1 pound pasta we like linguine or spaghetti, noodles
  • 1 pound Shrimp uncooked, peeled, deveined (optional)
  • 1/2 bunch cilantro for garnish

Instructions

  1. Heat oil over medium heat in a large stockpot or large, deep-walled skillet.
  2. Add chicken and cook until white (it doesn't need to be cooked through).
  3. Add remaining ingredients EXCEPT shrimp and cilantro.
  4. Bring to a boil, stirring often. Once boiling, reduce heat and simmer* for about 20-25 minutes or until noodles become soft, stirring often. Add more chicken broth if necessary.
  5. *If adding shrimp, add it at about 10 minutes into the simmering process.  The shrimp will need to simmer for 15 minutes to be fully cooked.
  6. Garnish with cilantro before serving.

Notes

  • Add shrimp about 10-15 minutes into simmering to avoid overcooking and maintain pink color.
  • For more flavor, sauté smoked sausage in butter before adding other ingredients.
  • If in a hurry, all ingredients can be added at once, though sautéing sausage and staggered shrimp addition improves taste and texture.
  • Add extra chicken broth during cooking if pasta absorbs too much liquid before fully cooked.
