One-Pot Zuppa Toscana is a hearty soup featuring spicy Italian sausage, potatoes, kale, and cream in a savory broth made with beef bouillon. The sausage and aromatics cook together before simmering with potatoes until tender. Kale and cream are added last for a balanced texture and creamy finish, making it a filling meal option inspired by the well-known restaurant soup.

Description

The One-Pot Zuppa Toscana Soup begins with browning medium spicy Italian sausage in a pot over medium-high heat, breaking it up as it cooks. Diced yellow onion and pressed garlic cloves are added and cooked until the onion softens.

Water combined with beef bouillon enriches the pot, and the mixture is simmered for about 30 minutes to develop flavor. Large potatoes peeled and cut into medium pieces are added to the pot to cook until tender.

After the potatoes soften, heavy whipping cream is stirred in and brought to a boil briefly before chopped fresh kale is added. The pot is covered and removed from heat, allowing the kale to soften gently in the residual heat. The soup can be served with grated Parmesan cheese and optional bacon bits for garnish.

This recipe offers a creamy, well-seasoned soup with tender potatoes, spicy sausage, and the nutritional addition of kale, suitable as a standalone meal on cooler days.

  • 1 lb Italian sausage medium spice
  • 1 yellow onion diced, large
  • 3 garlic cloves
  • 3 qts water
  • 2 tbsp beef bouillon Better Than Bouillon brand
  • 3 potato large
  • 1 cup heavy whipping cream
  • 1/2 kale fresh, bunch

Instructions

  1. Preheat a pot on medium-high heat. Add sausage to the pot, breaking the sausage into small pieces as it cooks.
  2. Dice an onion, then add to the pot with sausage. Press garlic cloves into the mixture. Cook until onions are tender.
  3. Carefully add water and Beef Better Than Bouillon to the sausage and onions mixture. Turn the heat down to low and let everything simmer for about 30 minutes.
  4. Peel the potatoes and slice into medium sized pieces and set aside. Chop kale into bite-size pieces, set aside.
  5. Add potatoes to the pot and simmer until potatoes are tender. Then add the whipping cream, and bring it to a boil. Add in chopped kale. Cover pot with a lid and turn off the heat. 
  6. Serve with Parmesan cheese and optionally garnish with bacon bits.
