Onion Bacon Jam

Ingredients
- ½ lb bacon, cut into small pieces
- ½ large yellow onion, diced
- 1 large shallot, diced
- 1 clove of garlic, minced
- ½ tsp chili powder
- ¼ cup brown sugar
- 2 ½ tbsp apple cider vinegar
- 2 tbsp real maple syrup
- small pinch of salt
Instructions
- Cook the bacon pieces in a skillet over medium-high heat until crispy. Remove from the skillet and place on a paper towel lined plate. Chop into small bits.
- Remove all but two tablespoons of bacon grease from the skillet and reduce the heat to medium.
- Add the onion and cook, stirring occasionally, for 5 minutes.
- Add the shallot and cook, stirring often, for another 10-15 minutes, or until caramelized.
- Add the minced garlic and chili powder then cook, stirring constantly, for 1 minute.
- Add the brown sugar, vinegar, maple syrup, bacon bits, and a small pinch of salt.
- Simmer, stirring often, for 10 minutes or until the mixture has thickened.
- Serve warm or at room temperature. Store in an airtight jar in the refrigerator. Enjoy.
