Orange Chia Pancakes (vegan/gf)

These vegan and gluten-free chia pancakes are full of flavour, nutrition and are absolutely delicious. The orange flavour really lifts them and makes them extra special.

Ingredients

Servings
  • 100 g oats (gluten-free if required)
  • 3 tablespoons chia seeds
  • 2 teaspoons baking powder
  • large pinch of salt
  • 240 ml almond milk
  • 2 tablespoons orange juice
  • 1 tablespoon maple syrup
  • 1 teaspoon orange zest
  • 1 teaspoon vanilla extract
  • 1 tablespoon olive oil or rapeseed or coconut oil, for frying

To serve (optional):

  • 5 kiwiberries sliced
  • orange zest

Instructions

  1. Whiz the oats in a blender or food processor until it turns into a fine flour. Transfer it into a large bowl and stir together with the chia seeds, baking powder and salt.
  2. In a separate bowl, combine the almond milk, orange juice, maple syrup, orange zest and vanilla.
  3. Mix the wet ingredients into the dry and whisk to ensure there are no lumps. Allow to sit for 10 minutes for the chia seeds to thicken the batter.
  4. Heat a frying pan over a medium heat and add the cooking oil. Spoon the batter into the hot oil and fry for a few minutes on each side until golden, then flip and cook the other side.
  5. Serve the pancakes topped with sliced kiwiberries, a sprinkling of orange zest and a drizzle of maple syrup.
