Orange Fruit Salad

Orange fruit salad has a variety of fresh fruit in a bright and sweet orange syrup.

Ingredients

  • 1/2 cup water
  • 1/2 cup granulated sugar
  • 1/4 cup fresh orange juice
  • 2 tablespoons fresh orange zest
  • 1 teaspoon vanilla extract
  • 2 pints strawberries hulled and halved
  • 1 pint blueberries
  • 1 pint blackberries
  • 2 cups red grapes halved
  • 2 cups fresh pineapple chunks

Instructions

  1. Stir together the water, sugar, orange juice, and orange zest in a small saucepan.
  2. Bring it to a boil over medium heat, stirring occasionally.
  3. Once at a boil, reduce heat to low and let it simmer for about 15-20 minutes, or until thickened.
  4. Remove the syrup from heat and stir in the vanilla extract.
  5. Let it cool to room temperature.
  6. If not using immediately, chill until ready to use.
  7. When you’re ready to finish the fruit salad, add the strawberries, blueberries, blackberries, grapes, and pineapple chunks to a large bowl.
  8. Pour the syrup over the fruit and toss to coat.
  9. Chill for at least 1 hour, or until ready to serve.

Notes

  • Sugar: Depending on how ripe and sweet your fruit is, you may want to adjust the amount of sugar accordingly.
  • Fruit: Feel free to vary the fruit depending on your tastes, the season, and what you have on hand. Some fruit, though, like fresh bananas don't keep as well as others.
