Orange Fruit Salad

Orange fruit salad has a variety of fresh fruit in a bright and sweet orange syrup.

Ingredients
- 1/2 cup water
- 1/2 cup granulated sugar
- 1/4 cup fresh orange juice
- 2 tablespoons fresh orange zest
- 1 teaspoon vanilla extract
- 2 pints strawberries hulled and halved
- 1 pint blueberries
- 1 pint blackberries
- 2 cups red grapes halved
- 2 cups fresh pineapple chunks
Instructions
- Stir together the water, sugar, orange juice, and orange zest in a small saucepan.
- Bring it to a boil over medium heat, stirring occasionally.
- Once at a boil, reduce heat to low and let it simmer for about 15-20 minutes, or until thickened.
- Remove the syrup from heat and stir in the vanilla extract.
- Let it cool to room temperature.
- If not using immediately, chill until ready to use.
- When you’re ready to finish the fruit salad, add the strawberries, blueberries, blackberries, grapes, and pineapple chunks to a large bowl.
- Pour the syrup over the fruit and toss to coat.
- Chill for at least 1 hour, or until ready to serve.
Notes
- Sugar: Depending on how ripe and sweet your fruit is, you may want to adjust the amount of sugar accordingly.
- Fruit: Feel free to vary the fruit depending on your tastes, the season, and what you have on hand. Some fruit, though, like fresh bananas don't keep as well as others.
