Our Version of Cafe Rio’s Sweet Pork Burrito
Description
The dish uses a single large tortilla filled with cooked cilantro-lime rice, black beans, and sweet pork prepared in Cafe Rio style. The burrito is assembled by layering these ingredients with half of the shredded Monterey Jack cheese, then rolled tightly. A sauce made from green chilies, salsa verde, chicken broth, sugar, and salt is simmered and poured over the rolled burrito. Additional cheese is sprinkled on top before the burrito is baked in a hot oven until the cheese melts and the sauce is heated through.
This approach combines the wrapped convenience of a burrito with the saucy, cheesy qualities of an enchilada. Ingredients
For the sauce:
- 4 ounces green chilies diced
- 7 ounces salsa verde
- 1/2 cup chicken broth
- 2 teaspoon sugar
- 1 teaspoon salt
For the burrito:

Instructions
- Combine all the sauce ingredients in small sauce pan. Bring to a boil, then reduce heat and let simmer for at least 20 minutes.
- Layer rice, beans, pork, and half of the cheese on top of the tortilla. Roll it up into a burrito.
- Pour about 1/2 cup of the green enchilada sauce over the burrito and top with additional Monterey Jack cheese. Place in the oven at 450-degrees until cheese is melted.
- Serve with lettuce, pico de gallo, and guacamole.
Notes
- Disposable 9" round foil pans replicate the restaurant's presentation and can be used for baking the burritos.
- Simple homemade recipes for rice and beans are recommended for the best flavor balance.
- The burrito is served "enchilada style" by topping it with enchilada sauce and extra cheese, then melting the cheese in the oven.
