Oven Roasted Leeks

Oven Roasted Leeks bring out the vegetable's mild onion flavor enhanced by olive oil, salt, pepper, and fresh parsley. Roasting at high heat until lightly charred develops sweet, tender layers. The preparation includes thorough cleaning and trimming to ensure no grit remains. The recipe offers flexibility to make ahead and store leftovers safely.

Description

This recipe uses large leeks cleaned carefully to remove any trapped dirt, trimmed to keep the edible white and pale green parts, then halved lengthwise. Roasting at 475°F in olive oil and seasonings softens the leeks while browning the edges, adding complexity to their naturally subtle sweetness.

The cooking method results in tender, slightly caramelized leeks with a fresh herbaceous note from chopped parsley. The high oven temperature promotes browning without drying out the vegetable.

Oven roasted leeks can serve as a side dish alongside roasted meats or fish, or be chopped further and added to salads or grain bowls. Their mild flavor and unique texture make them a versatile vegetable component for various meals.

Leftover roasted leeks keep well refrigerated for up to three days and reheat nicely in the oven or microwave. Pre-roasting leeks a day or two ahead is an option for meal prep.

Ingredients

Servings
  • 4 leek large
  • 4 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper ground
  • 2 tablespoons parsley chopped, fresh

Instructions

  1. Preheat the oven to 475.
  2. Clean the leeks thoroughly but leave the root end intact. Cut away the root fibers, but don’t cut off the area where the leaves attach to the base of the stem. Trim away the tough, dark green tops. Split the leeks in half lengthwise. Check for any dirt that may be inside the leeks and rinse again if needed.
  3. Place the leeks in a single layer in a casserole or baking dish. Drizzle with the olive oil and sprinkle with the salt, pepper, and chopped fresh parsley. Turn the leeks several times to coat all sides with the oil and seasonings.
  4. Bake for 15-20 minutes, turning once, until the leeks begin to blacken.

Notes

  • Store leftovers in a sealed container in the refrigerator for up to three days.
  • You can roast leeks up to two days before serving; reheat them in the microwave or oven until warmed through.
