Description
Overnight Sausage Breakfast Casserole uses dried bread cubes as a base, layered with cooked Italian sausage, diced bell peppers, chopped green onions, and shredded Italian blend and mozzarella cheese. The dish is bound together by a mixture of eggs and milk seasoned with Italian herbs and pepper.
After assembly, it rests overnight or at least a few hours in the refrigerator to allow the egg mixture to fully soak into the bread and fillings. Baking at 350°F covered with foil ensures even cooking and a tender center, while preventing excessive browning. This casserole serves well as a make-ahead hearty breakfast or brunch dish.
Removing crusts and drying bread cubes ahead of time prevents sogginess. Combining different cheese types results in a blend of gooey and mild cheesiness balancing the savory sausage and fresh vegetables.
Ingredients
- 14 lices bread crust removed, cubed and dried, see note
- 1 pound Italian sausage links
- 3 green onions sliced
- ½ red bell pepper finely diced
- ½ green bell pepper finely diced
- 2 cups Italian cheese blend shredded
- 2 cups mozzarella cheese shredded
- 6 egg
- 3 cups milk
- 1 teaspoon Italian seasoning
- black pepper to taste
Instructions
- Remove casing from sausage and cook over medium high heat until no pink remains. Drain any fat.
- Layer ½ of the cubes in a greased 9×13 pan. Top with ½ of each the sausage, green onions, peppers, and cheese. Repeat layers ending with cheese.
- Combine eggs, milk, & seasonings Pour egg mixture over bread ensuring all of the bread has been covered. Refrigerate overnight (or at least 3 hours).
- Remove from fridge and place in the oven while preheating the oven to 350°F. Bake covered with foil 65 to 75 minutes or until a knife inserted in the center comes out clean. (If you are baking 2 pans increase cooking time will need to increase).
Notes
- Dry bread cubes thoroughly by leaving them out overnight or warming in a 300°F oven for about 10 minutes without browning.
- Removing crusts from bread improves texture and soaking ability.
- Cover casserole with foil during baking to prevent over-browning and retain moisture.
- Increase cooking time if preparing more than one pan at once.
