Paleo Banana Cookies Recipe

Paleo Banana Cookies combine ripe banana slices, almond butter, and almond flour with warming cinnamon and baking powder for a soft, chewy cookie speckled with dark chocolate chips, walnuts, coconut, and raisins. The topping of banana slices pressed into each cookie before baking adds moisture and enhances banana flavor. The cookies have a wholesome texture from nuts and dried fruit.

Description

This cookie recipe mixes mashed bananas and almond butter with water and vanilla to create a moist base before folding in almond flour, baking powder, cinnamon, and salt. Folded in are chocolate chips, walnuts, coconut, and raisins, adding sweetness and texture. Each cookie portion is topped with a banana slice that slightly flattens it during baking and keeps moisture in.

The cookies bake to a golden bottom with a tender center and slightly chewy texture, balancing natural sweetness and nutty flavors. They suit snacking or a light dessert for those following paleo or grain-free diets.

Baking on parchment-lined sheets helps prevent sticking, and cooling after baking allows the cookies to firm up without losing softness. The combination of spices and mix-ins creates complexity within a simple batter framework.
