Pancake Breakfast Sandwich Griddlers

Pancake Ingredients

  • 2/3 cup oat flour (80 grams)
  • 2 coop whey protein powder 60 grams, Jay Robb's vanilla flavor
  • 2 tbsp powdered peanut butter 12 grams, PB2 brand
  • 1/2 tsp baking powder
  • 1/2 cup almond milk 4 fl oz, unsweetened vanilla
  • 6 tbsp Greek yogurt 85 grams, Dannon Light and Fit vanilla flavor
  • 2 egg 60 grams, white
  • 1/2 tsp vanilla extract

Other Ingredients

  • 6 turkey breakfast sausage 204 grams, brand: Jimmy Dean, patties
  • 6 egg 360 grams, white
  • 2 egg (100 grams)
  • 6 lices sharp cheddar cheese 64 grams, ultra thin slices, brand: Sargento

Instructions

  1. Mix all dry pancake ingredients, then add wet ingredients and mix until combined. Heat a pan or griddle over medium-high heat and spray with non-stick cooking oil.
  2. Pour pancake batter onto griddle to form six 3-inch round pancakes (you may need to do it in 2 or 3 batches). Once top of pancakes begin to bubble and pop, flip and cook other side until cooked through. Set aside on a plate and cover with foil to keep warm.
  3. Heat turkey sausage patties on griddle or pan until hot (or cooked through, if you are using raw sausage). Set aside.
  4. Cook eggs as desired - I whisked mine and poured them into egg rings in the hot pan.
  5. Once eggs are almost completely cooked, remove egg ring and add slices of cheese on top to melt.
  6. Assemble breakfast sandwiches with a pancake, egg, cheese, sausage and another pancake. Top with maple syrup before serving (not included in nutrition info).

Notes
