Ingredients

  • 2 tablespoons salted butter melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup whole milk
  • 2 teaspoons baking powder
  • 1 cup all-purpose flour
  • 1 ½ tablespoons granulated sugar
  • 1 cup Colby jack cheese
  • 6 sausage links cooked
  • cooking spray

Instructions

  1. Preheat the oven to 400°F and coat a mini muffin tin with nonstick cooking spray.
  2. In a medium sized bowl, whisk together the milk, egg, melted butter, and vanilla until thoroughly combined.
  3. Whisk in the baking powder, flour, and granulated sugar until the pancake batter is smooth and homogenous. Fold in the cheese until it is evenly distributed throughout the batter.
  4. Fill your mini muffin tin with the batter. Slice your cooked sausage links into discs about ½ inch thick and place one piece of sausage in the center of each muffin.
  5. Bake your pancake sausage bites for 15 minutes.
  6. Serve and enjoy!

Notes

  • How to Check for Doneness: Insert a toothpick into a couple bites and if it comes out clean or with minimal crumbs they're done.
