Pancakes Without Baking Powder Recipe

  • 1 cup all purpose flour
  • 2 tablespoons sugar
  • ¼ teaspoon salt
  • 2 large eggs
  • ½ cup whole milk
  • 2 tablespoons olive oil or another neutral flavored oil like canola or sunflower oil

Instructions

To make the batter

  1. In a medium bowl, mix together the flour, salt and sugar until well mixed. If you’re using cinnamon, add it as well.
  2. Carefully separate the egg yolks and egg whites and place them into separate bowls.
  3. Whisk the egg yolks and add the milk, vanilla extract if using, and oil. Mix until combined.
  4. Slowly add the egg yolk mixture to the flour mixture.
  5. Mix until well combined and the batter is smooth without any lumps.
  6. In another bowl, whip the egg whites using an electric mixer until soft peaks are formed. Make sure there is no trace of egg yolk or the whites won’t whip.
  7. Continue to whip the egg whites with the mixer for 2 to 3 minutes starting from the lowest speed and gradually increasing to the highest speed.
  8. Immediately fold the beaten egg whites into the batter and gently mix until evenly combined.
  9. The batter is now ready to make the pancakes.

To make the pancakes

  1. Heat a cast iron skillet or a non-stick pan and add a little butter or oil.
  2. Add a ladle of batter to the hot pan and let it cook until the bottom is golden brown and bubbles appear on the top.
  3. Gently flip the pancake and cook the other side. It will cook faster than the first side so be careful not to let it burn.
  4. Once the pancakes are cooked, enjoy them hot with butter, maple syrup, and your favorite toppings!
