Delicious Oats Pancakes Without Egg

Homemade oat pancakes without eggs are so light and fluffy. The whole oats folded into the batter bring a delicious bite and added fiber making them a healthy choice for breakfast. Enjoy these with fresh berries and maple syrup any day of the week.

Ingredients
- 1 cup flour
- 1 tablespoon sugar
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 teaspoon vanilla
- 2 tablespoons vegetable oil
- ¾ cup plus 2 tablespoons milk
- 1 teaspoon white vinegar
- ½ cup oats
- Extra oil for frying
- Raspberries, Blueberries, Banana for garnish

Instructions
- Add flour, baking powder, baking soda, salt, sugar, and oats to a medium sized bowl. Whisk together until fully combined.
- In a separate medium bowl, whisk together the oil, milk, vanilla, and vinegar. Stir the dry ingredients into the wet ingredients. Do not over mix it’s okay if your batter still has a few small lumps.
- Heat a large nonstick skillet over medium heat. Add a splash of oil to the skillet just enough to keep the pancakes from sticking. Or you can spray the skillet with cooking spray.
- Add ¼ cup of the pancake batter to the heated skillet. Cook until the surface of pancakes have bubbles and the sides have started to cook and stiffen. Carefully flip the pancake using a spatula and cook until browned on the other side. About 1-2 more minutes.
- Remove the healthy oatmeal pancake from the skillet and set aside. Repeat with remaining pancake batter. Serve with butter, maple syrup, and or fresh berries.
