Description
These Parmesan Scones combine flour, butter, cream or yogurt, along with grated cheese and Parmesan for a savory dough that is soft yet slightly crumbly. Basil and leavening agents such as baking soda and baking powder provide gentle lift, while half an egg in the dough enriches the texture. The dough is divided, shaped into balls, flattened into discs, then cut into triangular wedges arranged with small gaps to allow even baking.
Each scone wedge is brushed with an egg yolk and milk wash, then sprinkled with additional grated Parmesan and smoked paprika to add a touch of smoky aroma and color to the crust. Baking at 200°C (about 390°F) for 15-20 minutes yields scones with a golden-brown exterior and a moist, tender crumb inside, making for a satisfying snack or accompaniment.

- 300 g flour
- 100 g butter
- 150 ml cream or yogurt
- 50 g cheese
- 50 g parmesan
- 1/2 tsp salt
- 1/2 tsp basil
- 1/2 tsp baking soda bicarbonate
- 1/2 tsp baking powder
- 1 egg
For greasing:
- 1 egg yolk; plus 1 tablespoon milk
- Parmesan Cheese grated
- smoked paprika
Instructions
How to make PARMESAN SCONES:
- Sift the flour together with the salt, baking powder, and baking soda.
- Add the basil and mix.
- Add the butter and knead gently until you get a crumbly dough.
- Add the cheese and grated Parmesan.
- Stir again and finally add the yogurt together with the beaten egg.
- Mix until you get a homogeneous ball of dough.
- Heat the oven to 200 C degrees (390 F). Line a large baking tray with baking paper.
- Divide the dough into two pieces.
- Make two balls from the two pieces and place them on the baking paper at a distance.
- Flatten the balls slightly until they are 2-3cm (0.8-1.2 inch) high.
- Cut each ball into 8 triangles.
- Slightly divide the 8 triangles so that there is 1cm distance between them.
- Brush the triangles with beaten egg and sprinkle grated Parmesan and smoked paprika on top.
- Bake the scones until nicely browned, about 15-20 minutes.
