  • 1 pound ground beef lean
  • 3 medium carrot diced
  • 2 ribs celery diced
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 4 cups chicken stock
  • 15 ounces tomato sauce canned
  • 15 ounces diced tomatoes canned
  • 15 ounces great northern beans drained, canned
  • 15 ounces red kidney beans drained, canned
  • 1 teaspoon basil dried
  • 1 teaspoon oregano dried
  • ½ teaspoon thyme dried
  • ½ teaspoon rosemary dried
  • 1 teaspoon salt
  • 1 teaspoon black pepper cracked
  • 1 cup ditalini pasta

Instructions

  1. Add the ground beef to a large pot or duct oven over medium heat and crumble.
  2. Add the carrots, celery, onion, and garlic and continue cooking, stirring often, until the meat is cooked through.
  3. Add the chicken stock, tomato sauce, diced tomatoes, beans, and spices.
  4. Bring to a boil and reduce the heat to a simmer. Simmer for 15 minutes.
  5. Add the pasta to the pot and continue cooking for 10 minutes.
  6. Serve immediately.

Notes

  • Ground turkey or Italian sausage can be substituted for ground beef based on preference.
  • Any small pasta shape is suitable if ditalini is unavailable.
