Pasta with Peas

Pasta with Peas is a straightforward pasta dish featuring linguine cooked with peas to retain their fresh flavor and color. Tossed with optional pesto and pasta cooking water, it results in a gently coated, lightly sauced pasta. Finished with parmesan, fresh basil or mint, and black pepper, it's a simple meal highlighting delicate pea sweetness and herbal notes.

Description

This recipe involves cooking linguine pasta in salted boiling water, adding fresh or frozen peas during the last two minutes to soften them without losing their texture or vibrance. After draining, the pasta and peas are combined with pesto and reserved starchy pasta water to create a light sauce that clings to the pasta, preventing it from becoming dry or sticky.

The dish is seasoned simply with grated parmesan cheese and fresh torn basil leaves or optionally fresh mint for an aromatic touch. A generous grinding of black pepper completes the flavor profile. This ensures a bright, subtly herbed dish with a creamy and lightly sauced consistency.

Such pasta with peas is well suited for a quick homemade meal that balances starch and vegetables, with the pesto adding richness if used. The reserved cooking water contributes to sauce cohesion and silkiness.

Ingredients

Servings
  • 6 cups pasta I used linguine, 350g
  • 1 + ½ cups peas fresh or frozen, 225g
  • ½ cup pasta cooking water, reserved
  • 4 tablespoon pesto (optional)

To serve:

  • parmesan (vegetarian or vegan if required)
  • basil torn (or try fresh mint, leaves
  • black pepper freshly ground

Instructions

  1. Cook the pasta in a pot of salted boiling water according to package instructions. For the final 2 minutes of cooking time, add the peas.
  2. When it’s cooked, reserve ½ cup of the pasta cooking water and set aside, then drain the pasta and peas.
  3. Add the pasta, peas, pesto and cooking water to a large bowl and gently toss to coat. The cooking water is starchy and helps the pesto to coat the pasta and stop it sticking or becoming claggy.
  4. Divide between serving plates and top with parmesan and basil leaves, plus a good grinding of black pepper.
